Helderberg Winter wheat whiskey

The wheat we distilled to make our Helderberg Winter Wheat Whiskey is a rough-and-tumble grain. It annually survives the Northeast’s uncompromising winters to greet springtime with a kiss, and now its liquid form is ready for your lips! This is yet another single-grain whiskey from celebrated distiller Tyler LaCorata, and we’re absolutely giddy to introduce you to this spirit’s sweeter flavor profile, informed by the grain’s sugars and the influence of half a decade in a charred new oak barrel.

Grain Bill: 75% rye, 15% corn, 10% malted barey

HElDERBERG Straight Rye whiskey

The grains for our Helderberg Straight Rye Whiskey are sourced from the base of the ancient Helderberg Escarpment. Aged for five years in charred oak barrels and composed of 75% rye, this signature whiskey qualifies as a true New York “Empire Rye”. Though perfect neat or on the rocks, add a pinch of brown sugar and a bitter or two to sip on that truest of “Old Fashioned” spirits. Our rye whiskey is the core of our company’s unapologetic New York identity!

Grain Bill: 60% corn, 25% rye, 15% barley

Helderberg Bourbon

We distilled our first barrels of Helderberg Bourbon in 2018. Crafted from the LaGrange Farm’s “bloody butcher” dent corn—an old-style heirloom grain that’s been grown in the United States since 1845—this bourbon packs a signature flavor that’s easy to recognize whether you’re sipping in New Scotland or on the other side of the world.

Aged for five long years in homage to the traditional production methods borrowed from our compatriots in Kentucky, we haven’t cut a single corner in ensuring that this particular brand lives up to the promise of its inspiration (read the label!)

Helderberg Vodka

Helderberg Vodka is six times distilled (from 100% corn), thrice charcoal filtered, and bottled at 82-proof to ensure an incomparably crisp and refreshing taste.

This small batch, single grain vodka is handcrafted from corn grown exclusively in the very state that New Scotland Spirits has since taken by storm: New York!

Grain Bill: 100% rye

We distilled this spirit in accordance with the rigorous criteria set forth by the Empire Rye Association. To be a genuine Empire Rye, the whiskey must be:

  • distilled from a mash bill consisting of 100% grain grown in New York State, 75% of which must be rye grain (raw or malted);

  • distilled to no more than 160 proof;

  • aged for a minimum of two years in charred, new oak barrels at not more than 115 proof at time of entry; and

  • mashed, fermented, distilled, barreled, and aged at a single New York State distillery.

Grain Bill: 100% malted barley

Helderberg Single Malt whiskey

Helderberg Single Malt is our flagship spirit—the ambition that started it all. It’s a single malt whiskey made with 100% malted barley harvested from New Scotland’s beloved Indian Ladder Farms. Handcrafted over the course of five long years in new charred oak barrels, the smoky taste of this whiskey accentuates the terroir of upstate New York. The grains are traditionally floor malted in the Hudson Valley, and then distilled in the capital city that New Scotland overlooks. We’re so proud of this mellow and full-bodied experience. Helderberg Single Malt is a spirit to be enjoyed neat, in celebration of friendship, and for auld times’ sake. Ring in the New Year.

Grain Bill: 5% barley, 25% wheat, 70% corn

helderberg Bourbon, Bottled-in-Bond

Our one-time limited edition Helderberg Bonded Bourbon was barreled on in 2017 and released in 2022 to coincide with the 125th anniversary of the legislation which gave bonded bourbon the historic significance it has since attained. Bottled at 100 proof, it’s the “strongest” feature in our brand lineup. And it’s also our only wheated bourbon, distilled from a mix of wheat and corn sourced from farms right here in New York State.

HElDERBERG Bloody Butcher Bourbon

Helderberg Bloody Butcher Bourbon may be our most complex spirit, having aged for four years in charred oak barrels before spending a fifth year finishing in red wine casks with the local vintners down the road. Each bottle reflects the fruits of a half-decade labor of love, and embodies “the community spirit of our spirits” as a joint effort by: our neighbors at the LaGrange Farm, who grow the grain from which Bloody Butcher Bourbon is distilled; our neighbors at the Albany Distilling Company, who turn that grain into the so-called “water of life” (uisce beatha); and our neighbors at the Altamont Vineyard & Winery, whose stewardship of the bourbon in its final year gives it that rich burgundy hue. “It’s the color of New Scotland’s beating heart.”
